Cabrita is a conventiently sized, 4 oz “crottin”-style cheese that has has a wonderfully creamy yet fluffy texture and a clean tangy flavor. We are proud to be able to offer this cheese exclusively to Whole Foods Markets, and we plan to enter Cabrita in many different national and international competitions in 2018. Cabrita was first made popular at various farmers markets in Maryland and DC, and is a FireFly fan-favorite.
Cabrita is made using our fresh chevre, additional salt, and Geotrichum Candidum mold. It is aged for at least 14 days, and through daily care and careful manipulation of the aging room Cabrita is able to develop its signature wrinkled rind, which is in the style of classic French crottin cheeses.
Cabrita has subtle notes of grass and lemon, and is immediately satisfying on the tongue. It is less acidic than normal chevre, with a delicate earthiness that goat cheese lovers are sure to enjoy. Try pairing it with a Chardonnay or a Reisling, and enjoy it with simple fruits, charcuterie and your favorite sweet or savory tapenade on your next cheeseboard!
