Merry Goat Round Spruce Reserve
Spruce Reserve is a brie-style goat‘s milk round wrapped in a natural spruce-wood strap and carefully aged until the cheese body is fully ripened, creamy, spreadable, and has the texture of fondue. Spruce Reserve is the first strapped goat’s milk cheese of its kind, and is unique in flavor and texture.
The Good Food Foundation announced January 19, 2018 that FireFly Farms Merry Goat Spruce Reserve was a 2018 Good Food Award Gold Medal Winner! Spruce Reserve was one of sixteen cheeses to win such an award out of over 2,000 entries from all 50 states, and we are excited to be able to offer it year round. This award means a great deal to us, as it shows FireFly Farms and Spruce reserve meet the very high standards of the Good Food Awards in terms of our commitment to the environment, our farmers, and our community.
Complex, earthy and refined, Spruce Reserve delivers woody and mushroomy notes. To serve, the top rind of the Spruce Reserve is cut and removed from the cheese. With the support of the spruce wood strap, the body of the cheese is delicately spooned out and savored. Try pairing Spruce Reserve with a Sauvignon Blanc or a Chardonnay. Serve it with pears, cured olives, seasoned pecans and enjoy it with crostini on your next cheese board.
